Walnut and almond cookies

2 | teaspoons | Almond extract |
2 | teaspoons | Cinnamon |
2 | teaspoons | Grated orange rind |
1½ | cup | Walnuts, toasted, chopped |
1½ | cup | Almonds, toasted, chopped |
2 | Egg whites | |
¼ | cup | Lemon juice |
Confectioners sugar |
Directions
DOUGH
ICING
PREPARE COOKIES: Combine flour, baking powder, and salt. Work shortening into flour. Beat eggs into sugar, then add to flour, beat until a smooth dough forms. Stir in the spices, orange rind, and nuts. Blend well. Let dough rest 30 minutes.
Moisten hands with oil, form 1 T of dough into a 1" ball. Place on a greased cookies sheet. Bake in a preheated 375 degree oven for about 20 minutes.
PREPARE ICING: Beat egg whites and ¼ c lemon juice together. Gradually add confectioners sugar to form a smooth consistency. Brush icing over hot cookies as they come from the oven.
