Ingredients

9Hard-boiled eggs -- peel
Shell
3Scallions -- finely chopped
12ouncesCn tuna-drained and flaked
teaspoonDry mustard
¾cupSoy sauce
1tablespoonSesame or peanut oil
teaspoonLemon juice
Salt and freshly ground
Black pepper
Paprika

Directions

Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika. Note: Crab meat or abalone may be substituted for the tuna.
