Ingredients

| 9 | Hard-boiled eggs -- peel | |

| 3 | Scallions -- finely chopped | |
| 12 | ounces | Cn tuna-drained and flaked |
| 1½ | teaspoon | Dry mustard |
| ¾ | cup | Soy sauce |
| 1 | tablespoon | Sesame or peanut oil |
| 1½ | teaspoon | Lemon juice |
| Salt and freshly ground | ||
| Black pepper | ||
| Paprika | ||
Directions
Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika. Note: Crab meat or abalone may be substituted for the tuna.
