Yield: 9 Servings
|1½ cup||Vanilla wafers, crushed|
|4 tablespoons||Butter, melted|
|1½ cup||Confectioners' sugar|
|2 \N||Eggs, beaten|
|½ cup||Granulated sugar|
|2 cups||Strawberries, mashed, undrained|
|½ cup||Thick cream, whipped or Cool Whip|
Mix wafer crumbs and melted butter and spread on bottom of 9 inch square pan. Cream confectioners' sugar and butter. Beat in eggs.
Beat mixture until fluffy. Pour over crumbs. Chill. In sauce pan, combine granulated sugar, cornstarch and strawberries. Cook over medium heat, stirring constantly. Mixture will become thick and clear. Let cool. Pour over mixture in pan. Top with whipped cream.
Chill several hours before serving.
