Ingredients

3tablespoonsChicken stock or water
1Green pepper; coarsley chopped
1mediumSized onion; chopped
1Clove garlic; minced
¾cupPoultry stock or water
1cupSliced okra
2cupsChopped peeled tomatoes
cupLima beans
1cupCorn
½teaspoonDried marjoram
¼teaspoonCrushed red pepper; (optional)
1tablespoonCornstarch; dissolved in 1/4 cup water.

Directions

Heat the 3 T. broth in large skillet. Add green peppers, onions, and garlic. Saute until soft. Stir in the cup stock or water, okra, tomatoes, and lima beans. Simmer, covered until veggies are almost tender. About 20 minutes. Add corn and cook 5 minutes. Stir in marjoram, red pepper, and cornstarch mixture. Cook, stirring constantly until thickened. Simmer for 1 minute longer. Serve warm!
