Yield: 6 Servings
|1⅔ pounds||Pitted dates|
|1⅔ cup||Orange juice|
|2 teaspoons||Grated orange rind, no pith|
Chop the dates. Place them in a small saucepan awith the orange juice. Cook over low heat until the dates are soft and no liquid remains. Stir in orange rind. Cool before using. Makes 4⅓ cups, enough for one recipe of cookie dough. Nutrition analysis per cookies with egg: Calories, 86; Protein, 1g; Carbohydrates, 17g; Fat, 2g; Cholesterol, 9mg; Sodium, 35mg.
