Yield: 6 Servings
|1 cup||Julienne strips daikon; up to 2|
|½ cup||No cholesterol mayonnaise|
|1 teaspoon||Ground black pepper|
|1 teaspoon||Poppy seeds|
|1 teaspoon||Lemon juice|
Cut Daikon into fine narrow strips and set aside. Blend all other ingredients well and then add Daikon. Gently toss and coat Daikon until well coated with dressing. Arrange leaf lettuce on salad plates and mound strips in center. Garnish with parsley, red pepper and/or tomato.
