Cottage cheese loaf

Ingredients

1 large Bell pepper
3 mediums Carrots
3 tablespoons Margarine
1 large Onion, chopped
2 cups Cottage cheese, sieved
2 cups Breadcrumbs
1 each Lemon (juice of)
1 teaspoon Salt
½ teaspoon Pepper
2 eaches Eggs, well beaten

Directions

Drop green pepper into boiling water for 5 minutes. Drain, cool remove ribs and seeds, chop. Wash and scrape carrots. Grate coarsely.

Melt margarine (or butter), add onion, and cook for 3 minutes. Add green pepper, carrots, cottage cheese, breadcrumbs, lemon juice, and seasonings.

Blend very well, add beaten eggs and mix. Pour into well buttered loaf pan and bake at 350 F. 35 to 40 minutes. Serve with tomato sauce.
