Cod soup with orange

Ingredients

| 4 | cups | Fish stock |
| ⅔ | pounds | Cod fillets, cut into 1\" cubes |
| 6 | Potatoes, cubed | |
| 1 | Fennel, cubed | |
| 1 | Leek, white part only, shredded | |
| 8 | ounces | Can crushed tomatoes, undrained |
| 2 | Cloves garlic, minced Salt and pepper to taste | |
| ½ | Orange, juiced | |
| 2 | tablespoons | Chopped parsley |
Directions
Bring fish stock to a boil. Add remaining ingredients except orange juice and parsley; simmer 10-12 minutes. Add orange juice; simmer 3-4 minutes more. Serve soup piping hot, sprinkled with parsley.
