Cod soup with orange

Ingredients

4cupsFish stock
poundsCod fillets, cut into 1\" cubes
6Potatoes, cubed
1Fennel, cubed
1Leek, white part only, shredded
8ouncesCan crushed tomatoes, undrained
2Cloves garlic, minced Salt and pepper to taste
½Orange, juiced
2tablespoonsChopped parsley

Directions

Bring fish stock to a boil. Add remaining ingredients except orange juice and parsley; simmer 10-12 minutes. Add orange juice; simmer 3-4 minutes more. Serve soup piping hot, sprinkled with parsley.
