Clam chowder #1

Measure Ingredient
1 cup Chopped onion
1 cup Chopped celery
2 cups Chopped potatoes
2 cans Minced clams
1 tablespoon Apple cider vinegar
¾ cup Butter/margarine
¾ cup Flour
1 quart Half and half
\N \N Salt and pepper

Pour clam juice and vinegar over vegetables, add water just to cover.

Simmer 30 minutes. Melt butter, blend in flour, cook 1 minute, then add half and half. Cook until smooth and thick. Add ½ ts salt and pepper to taste/ Last add vegetables and clams, cook in crock pot at least 1 hour until flavor is through.
