Chuletas

Yield: 12 Servings

Measure Ingredient
4 pounds Beef, ground
1 cup Cheese, parmesan; grated
4 cups Parsley; minced
1 teaspoon Tabasco sauce
6 Onions, yellow; chopped
2 teaspoons Pepper, black
4 Eggs
6 cups Bread crumbs, dry
2 teaspoons Salt

Mix all ingredients except crumbs. Form into 30 small balls. Coat balls with bread crumbs. Chill well. Saute in olive oil three to four minutes. Serve with refried beans and salsa. Source: James Beard's American Cookery. From: B.ZACK [Zack] ~---
