6Shallots; peeled
1tablespoonCoarse ground black pepper
2Serrano chiles or 1 jalapeno
3Garlic cloves
2tablespoonsMinced ginger
1tablespoonSugar
1tablespoonKosher salt
2Limes; juiced
1tablespoonWorcestershire sauce
Canola oil to combine

Directions

In a food processor, combine all ingredients except the oil. Add just enough oil so that the paste mixes well, but remains thick.
