Ancho chili paste

Ingredients

4Ancho chilies; stem and seeds removed
1smallOnion; peeled and chopped
1Clove garlic; peeled and chopped
1Jalapeno; chopped
1Serrano chili; chopped
1Chipotle chili; chopped
1smallBunch fresh cilantro
1cupRich chicken stock

Directions

Place all ingredients in a medium saucepan over medium heat. Bring to a boil, then simmer for 10 minutes. Pour into a blender and puree until smooth. Set aside until ready to use.
