|⅓ cup||Soy sauce|
|2 tablespoons||Lime juice|
|1 pounds||Boneless chicken breast or thigh meat,cut into bite-size pieces|
|8 ounces||Fresh mushrooms,cleaned and sliced|
|½ pounds||Fresh snow peas|
|3 cups||Cooked rice|
Combine soy sauce, lime juice, water and cornstarch in a 2 qt. round casserole. Stir chicken and mushrooms into soy sauce mixture. Cover and stirring midway through cooking, microwave on high 7 to 8 minutes. Add snow peas, cover and microwave on high 2 minutes or until snow peas are tender crisp. Serve over a bed of fluffy rice, garnishing with lime wedges or slices of lime.
