Chicken with snow peas

Yield: 4 servings

Measure Ingredient
⅓ cup Soy sauce
2 tablespoons Lime juice
2 tablespoons Water
1½ tablespoon Cornstarch
1 pounds Boneless chicken breast or thigh meat,cut into bite-size pieces
8 ounces Fresh mushrooms,cleaned and sliced
½ pounds Fresh snow peas
3 cups Cooked rice

Combine soy sauce, lime juice, water and cornstarch in a 2 qt. round casserole. Stir chicken and mushrooms into soy sauce mixture. Cover and stirring midway through cooking, microwave on high 7 to 8 minutes. Add snow peas, cover and microwave on high 2 minutes or until snow peas are tender crisp. Serve over a bed of fluffy rice, garnishing with lime wedges or slices of lime.

Makes 4 servings.
