Chicken picante (a southwestern favorite)

2tablespoonsSoy sauce
¼cupWater
1teaspoonGarlic powder
1cupPicante sauce; or salsa (non-fat)
2tablespoonsPlain; non-fat yogurt or fat free sour cream
2tablespoonsDried parsley
1teaspoonOregano

Directions

Trim and cut chicken into thin strips. In large non-stick skillet or wok pan, combine soy sauce, water and chicken. Cook over very low (simmer) covered for approx. five minutes. Turn chicken strips frequently and cook until chicken loses pink color. Add garlic powder, Picante, yogurt, parsley and oregano. Cover and simmer an additional 2 to 5 minutes.
