Chewy ginger cookies

Measure Ingredient
¾ cup Shortening
1¼ cup Sugar; divided
1 \N Egg
¼ cup Molasses
1 teaspoon Vanilla extract
2 \N Cusp all-purpose flour
1 teaspoon Ground cinnamon
1 teaspoon Ground ginger
1 teaspoon Baking soda
½ teaspoon Salt
½ teaspoon Ground cloves

In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, molasses and vanilla; mix well. Combine dry ingredients; add to creamed mixture and mix well. Roll into 1" balls; roll in remaining sugar. Place 1-½" apart on ungreased baking sheets. Bake at 375 degrees for 10 minutes or until lightly browned. Cool on wire racks. Store in an airtight container.
