Cherry cheesecake squares

Yield: 18 Servings

Measure Ingredient
2 cups Graham cracker crumbs
1 cup Sugar, divided
14 cups (1/2 stick) butter OR
\N \N Margarine, melted
3 packs Cream cheese, softened
1 teaspoon Vanilla
2 \N Eggs
1 \N Can (20 oz) cherry pie-
\N \N Filling

Mix crumbs, ¼ cup of the sugar and butter. Press into 13 x 9 inch baking pan. Bake at 325F for 10 minutes. Mix cream cheese, remaining ¾ cup sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Pour over crust. Bake at 325F for 35 minutes or until centre is almost set. Cool.

Refrigerate 3 hours or overnight. Top with pie filling. Cut into squares. Garnish, if desired. Makes 18 servings. Prep time: 20 minutes plus refrigerating. Baking time: 35 minutes. ch
