Cashew nut & tofu pate

Ingredients

1tablespoonOlive oil
1smallOnion, diced
1smallGarlic clove, chopped
4ouncesCashews, toasted & ground
6ouncesTofu, drained
4tablespoonsWhite wine -=OR=- water
2tablespoonsParsley, chopped
Salt, to taste

Directions

Heat the oil in a shallow skillet & saute the onion & garlic until softened, about 5 minutes. Add this to the nuts in a mixing bowl.

Mash in the tofu. Stir in the wine or water, parsley & salt. Press the pate into indivdual ramekins, smooth the top of the mixture & serve.
