Cashew nut & tofu pate

Ingredients

| 1 | tablespoon | Olive oil |
| 1 | small | Onion, diced |
| 1 | small | Garlic clove, chopped |
| 4 | ounces | Cashews, toasted & ground |
| 6 | ounces | Tofu, drained |
| 4 | tablespoons | White wine -=OR=- water |
| 2 | tablespoons | Parsley, chopped |
| Salt, to taste | ||
Directions
Heat the oil in a shallow skillet & saute the onion & garlic until softened, about 5 minutes. Add this to the nuts in a mixing bowl.
Mash in the tofu. Stir in the wine or water, parsley & salt. Press the pate into indivdual ramekins, smooth the top of the mixture & serve.
