Ingredients

| 1 | pint | Grated carrots |
| ¾ | teaspoon | Ginger |
| 1 | tablespoon | Orange rind, grated |
| ½ | cup | Orange juice |
| 2 | pounds | Sugar |
| ½ | teaspoon | Salt |
| 1 | cup | Nuts |
| ¾ | teaspoon | Lemon juice |
Directions
Combine carrosts, sugar, orange rind and juice. Add salt and cook, stirring often. After 5 or 10 min. add ginger and lemon juice.
Continue cooking until a few dorps of the syrup form a firm ball in cold water. Remove from fire, add nuts and spread on wet board. Cut candy into squares when cold.
