1 pint | Grated carrots |
¾ teaspoon | Ginger |
1 tablespoon | Orange rind, grated |
½ cup | Orange juice |
2 pounds | Sugar |
½ teaspoon | Salt |
1 cup | Nuts |
¾ teaspoon | Lemon juice |
Combine carrosts, sugar, orange rind and juice. Add salt and cook, stirring often. After 5 or 10 min. add ginger and lemon juice.
Continue cooking until a few dorps of the syrup form a firm ball in cold water. Remove from fire, add nuts and spread on wet board. Cut candy into squares when cold.
