|1 pint||Grated carrots|
|1 tablespoon||Orange rind, grated|
|½ cup||Orange juice|
|¾ teaspoon||Lemon juice|
Combine carrosts, sugar, orange rind and juice. Add salt and cook, stirring often. After 5 or 10 min. add ginger and lemon juice.
Continue cooking until a few dorps of the syrup form a firm ball in cold water. Remove from fire, add nuts and spread on wet board. Cut candy into squares when cold.
