Carrot ring

Yield: 3 servings

Measure Ingredient
2 cups Mashed cooked carrots
1 cup Bread crumbs
3 \N Egg yolks, beaten
2 tablespoons Chopped onion
2 tablespoons Celery, chopped
2 tablespoons Chopped parsley
1 teaspoon Salt
¼ teaspoon Paprika
1 cup Milk
2 tablespoons Butter, melted
3 \N Beaten egg whites

Mix all ingredients, then add beaten egg whites. Put in a greased ring mold and place in a pan of hot water and bake for 1 hour at 350 degrees. Peas may be served in the center of the ring. Randy Rigg Submitted By RANDY RIGG On 07-09-95
