Cabbage with rice soup

Yield: 1 Servings

Measure Ingredient
1 cup Rice
1 \N Head of cabbage; about 3 lbs., cleaned and diced
4 slices Bacon
3 tablespoons Margarine
1 can (16 oz) tomatoes; drained and cut up
3 tablespoons Fresh parsley; chopped
2 smalls Cloves garlic
7 cups Chicken broth
½ cup Grated Parmesan cheese
\N \N Salt and pepper to taste.

Cook bacon in margarine for a few minutes, stirring occasionally. Add tomatoes, parsley and garlic. Simmer for about 10 minutes. Remove garlic and add the cabbage. Cover and simmer for 20 minutes. Add broth, salt and pepper. Cover and simmer for another hour. Add rice and cook for 30 minutes. Sprinkle with cheese and serve.
