Cabbage with rice soup

Ingredients

1cupRice
1Head of cabbage; about 3 lbs., cleaned and diced
4slicesBacon
3tablespoonsMargarine
1can(16 oz) tomatoes; drained and cut up
3tablespoonsFresh parsley; chopped
2smallsCloves garlic
7cupsChicken broth
½cupGrated Parmesan cheese
Salt and pepper to taste.

Directions

Cook bacon in margarine for a few minutes, stirring occasionally. Add tomatoes, parsley and garlic. Simmer for about 10 minutes. Remove garlic and add the cabbage. Cover and simmer for 20 minutes. Add broth, salt and pepper. Cover and simmer for another hour. Add rice and cook for 30 minutes. Sprinkle with cheese and serve.
