Buttermilk mashed potatoes

Measure Ingredient
3 pounds POTATOES
1½ cup BUTTERMILK
¼ cup BUTTER
1 teaspoon SALT
½ teaspoon BLACK PEPPER

PEEL 3 LBS. POTATOES AND CUT INTO CUBES ½" SQUARE. PLACE IN A 4 QUART SAUCE PAN WITH ENOUGH WATER TO COVER AND BRING TO A BOIL. LOWER HEAT AND SIMMER FOR ABOUT 15 MINUTES OR UNTIL POTATOES ARE TENDER. DRAIN WATER FROM POTATOES AND AND PLACE THEM IN A LARGE BOWL. ADD BUTTERMILK, SALT, PEPPER AND BUTTER. BEAT WITH AN ELECTRIC MIXER ON MEDIUM SPEED UNTIL SMOOTH AND CREAMY. PLACE IN SERVING DISH AND DOT WITH BUTTER.
