THE CROQUETTES
THE SAUCE
The croquettes------ Finely chop onions and green peppers. Microwave them until tender (approx 3 min.) In medium bowl, beat eggs, add drained salmon, cracker crumbs, and remainder of ingredients. Mix thoroughly. Separate into balls and refrigerate 1 hr. Fry in oil until brown, turning as neccessary. Serve with peas in white sauce.
The sauce In med. sauce pan, mix flour and milk and heat slowly until thickened and sauce forms -- stirring constantly to avoid lumps. Add peas. Serve over croquettes
