Broiled pineapple with cinnamon and rum

Ingredients

Quantity Ingredient
1 Ripe pineapple, peeled, cored, sliced 1\" thick
1 cup Brown sugar
1 teaspoon Ground cinnamon
½ teaspoon Pure vanilla extract
½ cup Meyers's dark rum

Directions

Place the pinapple slices in a baking pan that will fit under the broiler.

Combine the sugar, cinnamon, and cloves and sprinkle over the pinapple.

Broil until tender and somewhat caramelized.

Remove the pineapple to a serving platter. Combine the vanilla and rum and pour into the pan over low heat, on top of the stove, loosening any brown bits with a spoon. Pour the rum syrup over the pineapple. Serve warm.
