1¼ cup | Whole wheat flour |
1¼ cup | Corn meal |
1¼ cup | Rye flour |
1 teaspoon | Baking soda |
½ teaspoon | Salt |
2½ cup | Buttermilk |
1 cup | Dark molasses |
1 cup | Raisins |
Sift together the dry ingredients in a large mixing bowl. Add the buttermilk, molasses and raisins. Mix by hand until well blended. Divide the mixture into 2 parts. Place each in a waxed paper lined baking dish that are 10 x 6 x 1-¾. Cover each with a plastic wrap. Microwave one loaf at a time on medium (50%) for 22 - 24 minutes. Turn dish a half turn halfway through cooking. Remove plastic wrap. Place on a solid surface for about 10 minutes before removing from baking dish.
