5poundsPork or mutton fat; (Sheep tail).
2tablespoonsCoriander seed ground
½Grated nutmeg
4tablespoonsSalt
2tablespoonsGround cloves
2tablespoonsAllspice
2tablespoonsPepper
2tablespoonsChile powder or to taste *

Directions

* Added to the original recipe. Mince beef and cut fat into small cubes. Mix all ingredients well. Cover for one hour. Fill large size skins (casings) and tie ends.
