|⅓ cup||Oat bran|
|½ cup||Brown sugar|
|1 tablespoon||Baking powder|
|½ teaspoon||Cinnamon; or to taste|
|1 cup||Nonfat milk|
|2||Eggs whites; beaten|
|1 cup||Fresh blueberries|
|1 tablespoon||Grated orange peel; (or fresh orange slices)|

Preheat the oven to 425F. Combine the oat bran, flour, oats, brown sugar, baking powder, salt and cinnamon in a bowl. Mix. Add the milk, egg whites and oil. Stir until moist. Fold in the fruits and vanilla. Spray a muffin tin with nonstick spray and fill cup two thirds full. Bake for 25 minutes.
Makes nine muffins.
