¾ cup | Hot water |
½ cup | Molasses |
¼ cup | Milk |
2 cups | Whole-wheat flour |
1 cup | All-purpose flour |
⅔ cup | Sugar |
3 tablespoons | Baking powder |
1 teaspoon | Baking soda |
½ teaspoon | Salt |
1½ cup | Pecans; chopped |
Preheat oven to 300 degrees Fahrenheit.
In a medium bowl combine the hot water and molasses, stirring until blended. Stir in the milk and blend.
In a separate bowl, combine flours, sugar, baking powder, baking soda, and salt. Fold liquid mixture and pecans into dry ingredients just until flour is thoroughly mixed; do not overmix.
Spoon into 12 greased muffin cups. Bake about 45 minutes to 1 hour, until done. Remove from cups and serve while hot.
Makes 12 muffins.
