Belmar chowder pot for 4

Ingredients

1tablespoonOlive oil
3Shallots, diced
1Banana pepper; seeded and diced
1Carrot; diced
2Red potatoes; cubed
1Tomato; skinned and cubed
1pinchSaffron
1pinchNutmeg
1pinchCloves; ground
1pinchDill
1poundsMonkfish; in 1-in cubes
Water ; or fish stock, clam juice, bouillon, wine, or other flavorful fluids
1Orange; sliced very thin

Directions

Heat oil and saute shallots and pepper until they soften. Add vegetables and spices. Heat to simmer and cook 5 minutes. Add fish and simmer another 15 minutes. Serve garnished with 1 or 2 thin slices of orange.
