Beef parmigiana - owensboro style

Yield: 4 servings

Measure Ingredient
1½ pounds To 2 lb sirloin steak
½ cup Parmesan cheese; grated
½ cup Fine, dry breadcrumbs
1 each Egg; beaten
⅓ cup Oil
1 medium Onion; minced
1 teaspoon Salt
½ teaspoon Sugar
½ teaspoon Marjoram
6 ounces (1 can) tomato paste
2 cups Hot water
½ pounds Mozzarella cheese; sliced

Pound meat into ¼-inch thickness. Trim fat and cut into approximately 8 pieces. Combine Parmesan cheese and bread crumbs.

Dip meat in egg; roll in crumb mixture. Heat oil in skillet and brown steak on both sides over medium heat until golden brown. Place browned meat in shallow baking dish. In same skillet, cook onion until tender. Stir in seasonings and tomato paste. Add hot water and stir well. Pour most of sauce over meat. Top with cheese slices and remaining sauce. Bake at 325 degrees for 35 to 45 minutes.
