Basic braised brussels sprouts

Yield: 4 servings

Measure Ingredient
1 pounds Small firm bright green
\N \N Brussels sprouts, rinsed
\N \N Stem ends and discolored
\N \N Variation for Brussels Sprouts Braised in Cream
\N \N Leaves removed
½ teaspoon Salt

Bring sprouts, « cup water and salt to boil in 2-quart saucepan over medium-high heat. Lower heat, cover and simmer, shaking pan once or twice, until knife tip inserted into brussels sprout center meets no resistance, 8-10 minutes. Drain well and serve or continue with another recipe.

Follow recipe for Basic Braised Brussels Sprouts. substituting 1 cup whipping cream for « cup water. Increase cooking time to 10-12 minutes. Season with a pinch of grated nutmeg and ground black pepper. Serve without draining. Cook's Illustrated
