Banana ambrosia salad with sherry dressing

Yield: 6 servings

Measure Ingredient
Torn red leaf or radiccio lettuce
Torn Romaine lettuce
¾ cup Finely chopped dried starfruit
1 Pear, thinly sliced
¼ cup Salad oil
⅓ cup Dry sherry or vinegar
1 teaspoon Thinly sliced orange peel
2 Bananas, such as manzano, burro or red, peeled and sliced
1 large Orange, peeled, halved and sliced
¼ teaspoon Ground allspice
2 teaspoons Shredded fresh ginger root


Arrange lettuce on a large serving platter or four salad plates. On top of lettuce arrange fruit (dip banana slices in lemon juice to prevent darkening). Place dressing ingredients in a shaker jar.

Cover, shake well, drizzle over salad. Makes 5-6 servings.
