Baked vegetable stuffing

Measure Ingredient
2 \N Carrots; peeled, chopped
1 \N Celery stalk; fine chopped
1 medium Onion; fine chopped
1 \N Zucchini; cubed
1 cup Mushrooms; chopped
5 slices Bread; crusts removed, cubed
3 tablespoons Lemon juice
\N \N ;salt and pepper to taste
¼ cup Vegetable stock
¼ cup Wine; can sub with more vegetable stock
½ teaspoon Sage
½ teaspoon Thyme
2 tablespoons Fresh parsley; chopped OR 1T dried

Combine the first 8 ingredients in a casserole dish.

In small bowl, combine the rest.

Whisk the above together and then pour over the vegetable mixture.

Cover and bake 35 mins at 350. A baked sweet potato dish would go great with this.
