Baked vegetable stuffing

Ingredients

| 2 | Carrots; peeled, chopped | |
| 1 | Celery stalk; fine chopped | |
| 1 | medium | Onion; fine chopped |
| 1 | Zucchini; cubed | |
| 1 | cup | Mushrooms; chopped |
| 5 | slices | Bread; crusts removed, cubed |
| 3 | tablespoons | Lemon juice |
| ;salt and pepper to taste | ||
| ¼ | cup | Vegetable stock |
| ¼ | cup | Wine; can sub with more vegetable stock |
| ½ | teaspoon | Sage |
| ½ | teaspoon | Thyme |
| 2 | tablespoons | Fresh parsley; chopped OR 1T dried |
Directions
Combine the first 8 ingredients in a casserole dish.
In small bowl, combine the rest.
Whisk the above together and then pour over the vegetable mixture.
Cover and bake 35 mins at 350. A baked sweet potato dish would go great with this.
