Baked vegetable stuffing

Ingredients

2Carrots; peeled, chopped
1Celery stalk; fine chopped
1mediumOnion; fine chopped
1Zucchini; cubed
1cupMushrooms; chopped
5slicesBread; crusts removed, cubed
3tablespoonsLemon juice
;salt and pepper to taste
¼cupVegetable stock
¼cupWine; can sub with more vegetable stock
½teaspoonSage
½teaspoonThyme
2tablespoonsFresh parsley; chopped OR 1T dried

Directions

Combine the first 8 ingredients in a casserole dish.

In small bowl, combine the rest.

Whisk the above together and then pour over the vegetable mixture.

Cover and bake 35 mins at 350. A baked sweet potato dish would go great with this.
