Stuffing: ¼ cup bread crumbs ¼ cup raisins 2 Tbs chopped parsley 2 tbs chopped capers 2 tbs pine nuts 3 cloves garlic, chopped 1 tbs EV olive oil 1 tbs fresh lemon juice Tomato slices for garnish Butterfly the angler; combine the ingredients and spread the stuffing mix across the fish. Roll the fish around the stuffing, wrap tightly on foil, and bake for about 20 - 25 minutes at 350 degree F. To serve, slice across the roll and garnish with tomato, or better yet, a little tomato salsa.
