Avocado shrimp boats

2Soft avocados, peeled,
Halved, seeds removed
2cupsShredded lettuce
2cupsCooked shrimp, shelled and
Deveined
1cupAlfalfa sprouts
16Cherry tomatoes halved
Parsley for garnish
1Lemon cut into wedges
French dressing

Directions

1) On 4 salad plates, place avocado half on bed of shredded lettuce, spoon ½ c shrimp into cavity of each.

2)Arrange alfalfa sprouts and tomatoes on plate next to avocado.

3) Garnish shrimp with parsley and lemon wedges. Serve french dressing separately
