Yield: 4 Servings
|1 pounds||Pork tenderloin medallions; cut 1 " thick|
|1 tablespoon||Butter; plus|
|½ cup||Apricot jam|
|2||Green onions; sliced|
|¼ teaspoon||Dried mustard|
|1 tablespoon||Cider vinegar|
Flatten medallions slightly. Heat 1 Tablespoon of butter over Medium-High heat in a skillet. Saute pork about 2 minutes on each side. Remove from pan. To juice, add 1 tsp. buitter, apricot jam, green onions, mustard and cider vinegar. Cover and simmer for 3-4 minutes. Add prok to heat through.
Serve with buttered noodles. and green salad.
