Yield: 1 1/2 cups
|1 pack||(8-oz) dried apricots|
|1 tablespoon||Orange juice|
|¼ teaspoon||Ground cinnamon|
|½ cup||Diced honeycomb with honey|
1. In 2-quart saucepan, heat apricots and water to boiling over high heat. Reduce heat to low; cover and simmer apri- cots until very tender-about 15 minutes. Remove from heat; pour off any excess water.
Stir honey, orange juice, and cinnamon into apricots until well mixed.
2. In food processor, with chopping blade, process apricot mixture just until almost smooth. With rubber spatula, fold in diced honeycomb. Spoon apricot spread into jars; seal and store in the refrigerator.
