Apple poppy seed muffins

Yield: 1 Servings

Measure Ingredient
1½ cup All purpose flour
1 cup Whole wheat flour
½ cup Brown sugar, packed
4 teaspoons Baking powder
1 teaspoon Salt
1½ teaspoon Ground cinnamon (I like cinnamon so I used 2 teaspoons) (up to 2)
1 tablespoon Poppy seeds
2 \N Eggs (or egg substitute equivilant)
1½ cup Applesauce
1 teaspoon Vanilla extract
¼ cup Oil

Combine applesauce, eggs, oil, and vanilla in small bowl; mix well. In a seperate bowl mix flours, brown sugar, baking powder, salt, cinnamon and poppy seeds. Add wet ingredients to dry ones; stirring until just moistened. Spoon batter into greased muffin tins, filling ⅔ full. Bake at 400 F for 12-15 minutes.
