Apple cranberry muffin

Yield: 12 muffins

Measure Ingredient
1¾ cup Plus
2 tablespoons All purpose flour
½ cup Sugar
1½ teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
1 \N Egg
¾ cup Milk
¾ cup Sweetened applesauce
¼ cup Butter, melted
1 cup Fresh cranberries, coarsely
\N \N Chopped
½ teaspoon Ground cinnamon

In medium bowl, combine 1¾ cups of the flour, ¼ cup of the sugar, the baking powder, baking soda and salt. In small bowl, combine egg, milk, applesauce and butter, mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with remaining two tablespoons flour; fold into batter Spoon batter into 12 greased 2 ½ inch size muffin cups. In another small bowl; combine remaining ¼ cup sugar and the cinnamon. Sprinkle over muffins.

Bake in 400 degree oven for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan and cool on wire rack.
