Apple compote

Ingredients

2poundsGolden Delicious apples
4cupsWater
½cupSugar
Juice from a half lemon
1Vanilla bean split lengthwise

Directions

Peel, core and quarter the apples. Put all the ingredients in a large pan. Bring to boil. Reduce heat to low, cover and cook 15 minutes, until apples are slightly soft. Cool and refrigerate. Serve cold.
