Andersen's split pea soup

Yield: 8 servings

Measure Ingredient
2 quarts Water
2 cups Green split peas
1 \N Rib celery, coarsely chpd
1 large Carrot, chpd
1 small Onion, chpd
¼ teaspoon Ground dried thyme
\N dash Cayenne
1 \N Bay leaf
\N \N Salt and pepper


In lg pot, combine all ingreds and bring to hard boil, 20 mins. Reduce heat, simmer 45 mins oir until peas are tender. Strain soup through fine sieve and reheat. Taste, correct seasonings.
