American lamb cassoulet

Ingredients

| 10 | ounces | Canned diced tomatoes with green chiles |
| ½ | cup | Scallions; sliced |
| 1 | Clove garlic; minced | |
| 1 | teaspoon | Beef bouillon granules |
| 1 | teaspoon | Italian herb seasoning; crushed |
| 1 | cup | Tomato sauce |
| ¾ | pounds | Lamb shoulder; cut into 3/4 inch cubes |
| 1 | medium | Zucchini; halved lengthwise and sliced |
| 1 | pounds | Canned Great Northern beans; drained |
Directions
Prep: 10 min, Cook: 15 min.
Combine all ingredients, except zucchini and beans, in a microwave casserole. Cover and microwave on high 3 minutes. Remove cover and stir.
Continue to microwave another 4 minutes. Stir in zucchini and beans and microwave another 6-7 minutes, until meat is cooked throughout.
