10 ounces | Canned diced tomatoes with green chiles |
½ cup | Scallions; sliced |
1 \N | Clove garlic; minced |
1 teaspoon | Beef bouillon granules |
1 teaspoon | Italian herb seasoning; crushed |
1 cup | Tomato sauce |
¾ pounds | Lamb shoulder; cut into 3/4 inch cubes |
1 medium | Zucchini; halved lengthwise and sliced |
1 pounds | Canned Great Northern beans; drained |
Prep: 10 min, Cook: 15 min.
Combine all ingredients, except zucchini and beans, in a microwave casserole. Cover and microwave on high 3 minutes. Remove cover and stir.
Continue to microwave another 4 minutes. Stir in zucchini and beans and microwave another 6-7 minutes, until meat is cooked throughout.
