|10 ounces||Canned diced tomatoes with green chiles|
|½ cup||Scallions; sliced|
|1 \N||Clove garlic; minced|
|1 teaspoon||Beef bouillon granules|
|1 teaspoon||Italian herb seasoning; crushed|
|1 cup||Tomato sauce|
|¾ pounds||Lamb shoulder; cut into 3/4 inch cubes|
|1 medium||Zucchini; halved lengthwise and sliced|
|1 pounds||Canned Great Northern beans; drained|
Prep: 10 min, Cook: 15 min.
Combine all ingredients, except zucchini and beans, in a microwave casserole. Cover and microwave on high 3 minutes. Remove cover and stir.
Continue to microwave another 4 minutes. Stir in zucchini and beans and microwave another 6-7 minutes, until meat is cooked throughout.
