American lamb cassoulet

Ingredients

10ouncesCanned diced tomatoes with green chiles
½cupScallions; sliced
1Clove garlic; minced
1teaspoonBeef bouillon granules
1teaspoonItalian herb seasoning; crushed
1cupTomato sauce
¾poundsLamb shoulder; cut into 3/4 inch cubes
1mediumZucchini; halved lengthwise and sliced
1poundsCanned Great Northern beans; drained

Directions

Prep: 10 min, Cook: 15 min.

Combine all ingredients, except zucchini and beans, in a microwave casserole. Cover and microwave on high 3 minutes. Remove cover and stir.

Continue to microwave another 4 minutes. Stir in zucchini and beans and microwave another 6-7 minutes, until meat is cooked throughout.
