Alligator meatballs

Measure Ingredient
1 pounds Alligator meat -- chop
1 \N Egg
1 tablespoon Onion -- chop fine
2 tablespoons Celery -- chop fine
1 tablespoon Parsley -- chop fine
2 tablespoons Shallots -- chop fine
2 teaspoons Lemon pepper
½ teaspoon Salt
¼ cup Bread crumbs
\N \N Flour to dredge
1 cup Cooking oil

Mix all ingredients, form into 1" balls. Allow to set for 1 hour.

Dredge with flour and fry until brown. Serve hot. Source: Louisiana Seafood & Wild Game.
