Aduki, orzo and pepper salad

2cupsCooked orzo pasta
1cupFinely diced crunchy fennel
1cupSlivered roasted red peppers
¼cupFinely sliced black pitted olives
½cupPacked Italian parsley,, chopped
½cupDressing made with olive oil, balsamic vinegar, garlic
Salt and freshly ground black pepper
Crumbled goat or feta cheese for garnish

Directions

Mix the ingredients together and season with salt and pepper; garnish with cheese.

Yield: 4 servings
