Yield: 1 Servings
|10 cups||Fresh ground zuchini|
|4 cups||Ground onions|
|5 tablespoons||Kosher salt|
|2½ cup||White vinegar|
|1 tablespoon||Nutmeg, tumeric, cornstarch and dry mustard|
|½ \N||White pepper|
|2 teaspoons||Celery salt|
|1 large||Green pepper, chopped fine|
|1 large||Red pepper, chopped fine|
Mix zucchini, onions and Kosher salt together a let stand overnight; drain and rinse in cold water. Add remaining ingredients.
Boil and simmer for 30 minutes. Then can your favorite way.
This stuff is wonderful on everything you would use pickle relish but better.
