Zuchini relish

Yield: 1 Servings

Measure Ingredient
10 cups Fresh ground zuchini
4 cups Ground onions
5 tablespoons Kosher salt
2½ cup White vinegar
4½ cup Sugar
1 tablespoon Nutmeg, tumeric, cornstarch and dry mustard
½ \N White pepper
2 teaspoons Celery salt
1 large Green pepper, chopped fine
1 large Red pepper, chopped fine

Mix zucchini, onions and Kosher salt together a let stand overnight; drain and rinse in cold water. Add remaining ingredients.

Boil and simmer for 30 minutes. Then can your favorite way.

This stuff is wonderful on everything you would use pickle relish but better.
