Zucchini pancakes

Yield: 4 servings

Measure Ingredient
3 cups Zucchini, Raw -- finely
\N \N Chopped
1 \N Egg
¼ teaspoon Pepper
1 teaspoon Salt
½ cup Flour
1 teaspoon Baking Powder
⅓ cup Butter -- melted
⅓ cup Parmesan Cheese -- grated

Combine squash, egg, salt, and pepper in mixing bowl. Sift flour and baking powder over mixture. Mix well. Drop by ¼ cupfuls on lightly greased griddle. Brown and turn. Remove to warmed platter and serve with melted butter and Parmesan Cheese. Serves 4-6.
