Yield: 4 servings
|3 cups||Zucchini, Raw -- finely|
|1 teaspoon||Baking Powder|
|⅓ cup||Butter -- melted|
|⅓ cup||Parmesan Cheese -- grated|
Combine squash, egg, salt, and pepper in mixing bowl. Sift flour and baking powder over mixture. Mix well. Drop by ¼ cupfuls on lightly greased griddle. Brown and turn. Remove to warmed platter and serve with melted butter and Parmesan Cheese. Serves 4-6.
