Yorkshire tart

Yield: 6 servings

Measure Ingredient
4 ounces Flour
1 pinch Salt
1½ ounce Caster sugar
½ teaspoon Lemon zest
3½ ounce Butter
1 each Egg yolk



Mix dry and cut in butter. Quickly work in yolk. Chill. Butter 8½ inch flan and line with rolled and rested pastry. Chill.


4 oz butter 2 oz caster sugar 1 ts lemon zest 2 ea eggs, separated 9 oz curd cheese, sieved or ½ cottage cheese & ½ cream cheese 4 oz raisinspinch salt ½ ts nutmeg 1 tb almonds; grated Cream butter and sugar. Add zest, cheese, yolks and raisins.

Separately whisk whites until firm and fold into mixture. Scatter grated almonds over pastry and pour in filling. Bake at 400 for 15 min.; then 325 for 15 min. cool on rack.
