Measure | Ingredient |

8 \N | Egg whites (8 equals 1 cup) |
½ teaspoon | Salt |
1 teaspoon | Cream of tartar |
1⅓ cup | Sugar |
6 \N | Egg yolks |
½ \N | Orange rind; grated |
1¼ cup | Cake flour |
Beat egg whites with salt until foamy. Add cream of tartar & beat until stiff. Fold in sugar. Beat egg yolks until thick & lemon colored. Fold about ⅓ of egg white mixture into yolks. Blend well, using folding motion, and add this to remaining egg whites. Add the grated orange rind & fold in flour, sifted once before and several times after measuring. Bake in greased 9-½ inch tube pan. Place in cold oven. Set temperature control at 350. Bake for 50-60 minutes. MRS G.J. (MARY ELLEN) RAUNAM
