Yield: 8 servings
|1 cup||White beans; dried, such as white kidneys or pea beans|
|1 cup||Onions; finely chopped|
|1 teaspoon||Garlic; minced|
|2 tablespoons||Parsley; finely chopped|
|2 tablespoons||Basil; finely chopped|
|;black pepper to taste|
|3 teaspoons||Red wine vinegar|
|½ cup||Olive oil|
Unless the package specifies no soaking, place beans in a bowl and add water to cover about 2 inches above top of beans. Soak overnight.
Drain beans. Put in pot and add 4c water. Bring to boil, simmer 50 mins to 1 hour, til beans are tender. Drain well.
Put beans in a mixing bowl and add remaining ingredients. Blend gently but well. Serve warm.
