White beans vinaigrette

Yield: 8 servings

Measure Ingredient
1 cup White beans; dried, such as white kidneys or pea beans
4 cups Water
1 cup Onions; finely chopped
1 teaspoon Garlic; minced
2 tablespoons Parsley; finely chopped
2 tablespoons Basil; finely chopped
\N \N ;black pepper to taste
3 teaspoons Red wine vinegar
½ cup Olive oil

Unless the package specifies no soaking, place beans in a bowl and add water to cover about 2 inches above top of beans. Soak overnight.

Drain beans. Put in pot and add 4c water. Bring to boil, simmer 50 mins to 1 hour, til beans are tender. Drain well.

Put beans in a mixing bowl and add remaining ingredients. Blend gently but well. Serve warm.
