White beans vinaigrette

Ingredients

1cupWhite beans; dried, such as white kidneys or pea beans
4cupsWater
1cupOnions; finely chopped
1teaspoonGarlic; minced
2tablespoonsParsley; finely chopped
2tablespoonsBasil; finely chopped
;black pepper to taste
3teaspoonsRed wine vinegar
½cupOlive oil

Directions

Unless the package specifies no soaking, place beans in a bowl and add water to cover about 2 inches above top of beans. Soak overnight.

Drain beans. Put in pot and add 4c water. Bring to boil, simmer 50 mins to 1 hour, til beans are tender. Drain well.

Put beans in a mixing bowl and add remaining ingredients. Blend gently but well. Serve warm.
