Measure | Ingredient |

1 cup | White beans; dried, such as white kidneys or pea beans |
4 cups | Water |
1 cup | Onions; finely chopped |
1 teaspoon | Garlic; minced |
2 tablespoons | Parsley; finely chopped |
2 tablespoons | Basil; finely chopped |
\N \N | ;black pepper to taste |
3 teaspoons | Red wine vinegar |
½ cup | Olive oil |
Unless the package specifies no soaking, place beans in a bowl and add water to cover about 2 inches above top of beans. Soak overnight.
Drain beans. Put in pot and add 4c water. Bring to boil, simmer 50 mins to 1 hour, til beans are tender. Drain well.
Put beans in a mixing bowl and add remaining ingredients. Blend gently but well. Serve warm.
