White beans vinaigrette

Ingredients

| 1 | cup | White beans; dried, such as white kidneys or pea beans |
| 4 | cups | Water |
| 1 | cup | Onions; finely chopped |
| 1 | teaspoon | Garlic; minced |
| 2 | tablespoons | Parsley; finely chopped |
| 2 | tablespoons | Basil; finely chopped |
| ;black pepper to taste | ||
| 3 | teaspoons | Red wine vinegar |
| ½ | cup | Olive oil |
Directions
Unless the package specifies no soaking, place beans in a bowl and add water to cover about 2 inches above top of beans. Soak overnight.
Drain beans. Put in pot and add 4c water. Bring to boil, simmer 50 mins to 1 hour, til beans are tender. Drain well.
Put beans in a mixing bowl and add remaining ingredients. Blend gently but well. Serve warm.
