Wendy taylor's chicken sausages

Measure Ingredient
½ kilograms Chicken mince
5 Heaped tablespoons of fresh breadcrumbs
Freshly grated nutmeg
Salt and pepper
Flour
Olive oil for frying

Mix chicken mince with breadcrumbs and ¼ knob of grated nutmeg. Add salt and pepper, roll into sausage shape and roll in flour. Brush on a small amount olive oil into a pan and gently cook on all sides until done. Put on absorbent paper to drain.

Other flavours of nutmeg could be fresh marjoram and a fine grating of lemon rind, pistachio nuts and orange rind, shallots, chilli and shredded kaffir lime leaves.
