Walnut salad - country living

Yield: 4 servings

Measure Ingredient
1 pounds Mesclun (see Note)
½ cup Walnuts, toasted
3 tablespoons Walnut oil
2 tablespoons Lemon juice
1 teaspoon Honey
¼ teaspoon Salt
⅛ teaspoon Ground black pepper

Place mesclun and walnuts in large bowl. In small bowl, whisk together walnut oil, lemon juice, honey, salt, and pepper to make dressing.

Toss mesclun and walnuts with dressing and divide onto salad plates.

Note: Mesclun, a combination of baby leaf lettuces and greens, is generally sold in gourmet stores or at farmers' markets. If it is not available, make your own by mixing together any combination of the following greens: red and/or green-leaf lettuce, endive, radicchio, lamb's lettuce (mache), escarole, Boston lettuce, spinach, and/or arugula.
